Step 2: Leaf Selection
The process is also known as leaf sifting which basically involves sifting of irrelevant matters like sand, metal objects, stones that couldn’t be separated during the withering process.
Step 3: Oxidation
Oxidation helps in the flavor components & browning of the leaf. The cells of the leaf are exposed to oxygen & it starts going through the chemical reaction.
Step 4: Rolling
The process of rolling shapes processes the leaf into a tighter form. This process make the leaves look like tightly rolled pellets. The tighter the leaf, more the freshness.
Step 5: Drying
Drying process increases the flavor of the tea & provides long shelf-life. This process involves roasting & firing of the leaf at a very low temperature.
Step 6: Sorting
After all the processes, the tea is segregated into four parts according to the size of the leaf-whole leaf, broken, fanning & dust & sub-divided into various grades as per the quality of each leaf.
